Freshly baked cookie in mini cast iron pan

For those boring nights in when you just want something fun to look forward to. Indulge in this lazy person's dessert, as an ode to BJ's famous dessert.

1. Grab some leftover cookie dough (you can use the pre-made refrigerated stuff from the store).

2. Stick it in the mini cast iron pan (after you grease it up).

3. Cook it in a toaster oven (if you have one) or regular oven according to directions.

4. Eat it while it's hot and tasty.

Enjoy! It should be enough for 2 people, or just one if you don't want to share. :P You can add whatever ice cream you have in your freezer too!

P.S. Here's the skillet if you don't have one: 6.5" Lodge Cast Iron Mini Skillet from Cost Plus World Market in Mountain View or available online. I must say, this mini skillet is quite useful for cooking eggs (the original reason I bought this ) and small things, when you don't want to wash a big heavy skillet pan.

Let me know how it turns out for you and what you pair it with!
