Homemade mini pies for Pi Day

Okay this is quite belated because it's already been a month since Pi Day (March 14!). But to celebrate, I made these mini pies within a cupcake tin.
First I made the fillings. I made a blueberry compote from frozen blueberries and arrowroot flour and some water on a stovetop. Then I made an apple pie filling with chopped apples and cinnamon. No extra sugar!



I used premade pie dough crust and cut them into circles that would fit into the cupcake pan. I cut some circles for the top of the pies too and scored some of them and did strips as well.


I assembled everything which was a little trickier than expected, at least for putting the tops on the pies.

Here's how they turned out! A little janky haha but not terrible! The filling was good, but the pie crust didn't have much taste. I can see why people add sugar haha will do that next time for the filling, and probably try with a different pie crust too.


These little treats were plenty to celebrate Pi Day with! Until next year!
